I love figs and love to play with them whenever they are in season. I love them with savoury flavours and in this dip with walnuts and rosemary.

Balsalmic Fig Pate

Ingredients

Figs, fresh, 2 C
Celery, diced, 1/4 C
Tahini, 1/2 C
Walnuts, 2/3 C chopped
Red onion, diced, 1/4 C
Balsalmic vinegar, 2 T
Rosemary, fresh, 2 T
Sea salt, 1/4 t

Instructions

Presoak walnuts and chop if desired
Blend all ingredients except the walnuts, rosemary and celery until smooth in a food processor
Add the walnuts, rosemary and celery and pulse to combine

This recipe CAN be fermented prior to adding the tahini, if you want to do more like this consider joining the collective 🙂

Pomegranate Rosemary Flax Crackers

Ah the flax cracker. I love combining flavours to put in this one. Feel free to substitute and let me know what you come up with!

Pomegranate Rosemary Flax Crackers

Ingredients
  • Flax seeds, 1.5 C
  • Filtered water, 1.5 C
  • Red onion, 1/3 C diced
  • Pomegranate seeds, about 1/2 pomegranate (1/2 cup, frozen ok)
  • Rosemary fresh, 2 T
  • Himalayan salt, 1/2 t
Instructions

Presoak flax in water for 8 hrs

Break up flax seeds in the food processor as much as possible

Add other ingredients and pulse to combine

Taste for salt and adjust as needed

Spread onto Teflex or baking sheets and place in the dehydrator

Dehydrate for 6-8 hrs or until crisp (can dehydrate warmer for the first hour to speed up the dehydration for more food safety especially as the dampness of the crackers protects them from heat,

score the crackers after the first hour and return them to the dehydrator for the remaining time at 110

These can TOTALLY be baked in your oven if desired instead of dehydrating, at 350F/180C for 30 minutes

Blueberry Lime Candied Cashews

This recipe makes a great trail snack, garnish, dessert or salad topper, use your creativity.  Substitute other flavours that you have on hand or prefer to blueberry.

Blueberry Lime Candied Cashews

Ingredients

2 C raw cashews
1/2 C coconut sugar/crystals OR Xylitol or Erythritol
1/8 t Himalayan salt
1 T fresh lime juice
Zest from 2 limes
2/3 C chopped dried blueberries
1 t vanilla bean powder
2 T warm water

Instructions

Mix the warm water and coconut sugar together until the coconut crystals are dissolved

Add the lime juice, blueberries, lime zest, vanilla and salt

Lastly add the cashews and stir to combine

Dehydrate on teflex sheets in the dehydrator for 8-12 hours or until the outsides are dry to the touch

Flip onto a mesh sheet and continue dehydrating until they are the level of crispiness that you desire, can be up to 12 more hours

*Do not use soaked cashews for this because of the moisture

Chocolate Orange Chia Porridge

Here is a Zincalicious recipe to start off your day in an immune-modulating way. The sesame seeds, chia seeds, chocolate and/or carob provide zinc along with many other minerals, notably magnesium and calcium. The carob contains less zinc than the cacao but without the phytic acid of the cacao beans so you can decide for yourself what sort of alchemy you would like to create here. If you would like your porridge to be very low glycemic please skip the orange juice making step, replace it with water and focus on using the essential oils and the orange zest and perhaps the orange pieces instead.

This recipe requires soaking sesame seeds the morning before you want your porridge to make sesame milk

This recipe requires juicing oranges manually or in a juicer

Serves two

Prep Ahead: This recipe requires five minutes of prep the morning and five minutes the night before but is the best!

Chocolate Orange Chia Porridge

Ingredients

-1 1/2 C freshly squeezed orange juice
-1/2 C sesame seeds
-1/3 C chia seeds
-3 T cacao (can use carob or a combination here and use less if you are not using the oats)
-1/2 t cinnamon
-1/2 t vanilla powder (if you do not have powdered vanilla bean you can substitute 1 t vanilla extract of your choice or 6 drops medicine flower flavour oil)
-1-4 drops stevia or 1 t sweetener of choice, to taste
-Pinch of Himalayan salt
-Orange pieces for topping if desired
-Orange zest for garnish

*optional 3-5 drops orange or tangerine essential oil

*topping concepts:
soaked goji berries and strawberries
cacao nibs and shredded coconut
soaked dried apricot
mango and chilli
homemade probiotic yogurt
soaked pumpkin seeds for more zinciness

Instructions

The day before:
Soak sesame seeds in filtered water

The evening before:
Zest your orange so that you have 1 T zest roughly as a garnish (save covered in the fridge)

Juice oranges to make up to 1.5 C of orange juice. If you end up with less you can top off with water to reach 1.5 C total

Make orange sesame nut milk by blending the 1/2 C sesame seeds with 1.5 C orange juice/water. Strain through a fine mesh strainer, this should be a fairly thick orange nut cream. If it does curdle a bit that is ok we will be blending it later

Soak 1/4 C chia in the sesame orange milk in the fridge overnight

*Quick and dirty nut milk option:
Forgot to soak your sesame? Just make it anyway or use 3 T raw tahini in place of the sesame seeds, no need to strain

In the morning:
Blend the orange sesame milk and chia lightly (or pulse) with vanilla, cacao, cinnamon, Himalayan salt and essential oils if using.

Taste for sweetness and adjust.

Serve topped with your favourite fruits or spices and garnished with orange zest and a sprinkling of cacao.

Make this chocolate mint milk for adults and kids alike

Makes about a litre

Chocolate Peppermint Milk

Ingredients
  • 1 C hazelnuts, almonds or brazil nuts
  • 3-4 C water
  • 2 T cacao powder
  • 4 dates or 5 drops stevia
  • 1/2 t vanilla bean powder
  • Pinch himilayan salt
  • 1 drop peppermint essential oil (really, just try it before you add more…)

Instructions

If using almonds or hazelnuts soak them for 8-12 hours in water (can be in the fridge) and rinse before you start

Blend the nuts with 3-4 C water until very smooth

Strain through a nut milk bag

Return your “milk” to the blender and add your dates/stevia, cacao and peppermint essential oil

Taste for sweetness and peppermintyness and adjust accordingly
