Probiotic Stuffed Mushrooms
Ingredients
• Coconut Yogurt 1 C
• Thyme, fresh 1 t
• Sage, fresh 1 T
• Celery, chopped 1/4 C
• Walnuts, chopped 1/3 C
• Button mushrooms 40
• Garlic, 1 clove crushed
Method
• De-stem the mushrooms
• Mix all other ingredients together in a food processor or by hand until smooth but with texture
• Stuff the yogurt mixture into the mushrooms and warm in the dehydrator if desired for 2-5 hours
This recipe is of course probiotic because of the non-dairy yogurt that you are adding, hopefully you were able to customize it and make it exciting and nourishing for yourself. This recipe also benefits form the probiotics, the carbohydrates in the mushrooms. These not only feed our good bacteria but can signal our immune systems to become more active against yeasts, chronic viral infections and cancers. This is actually the same mechanism by which medicinal mushrooms like reishi and shiitake help regulate our immunity. Good to know that these immune signalling molecules also feed our digestive bacteria for even more immune support. Of course the garlic, thyme and sage can help to regulate our digestive bacteria through alicin and the antibacterial and antifungal phytochemistry in the herbs.
